Not only is it fresher and creamier, but you also avoid additives, preservatives, and unnecessary thickeners and oils (!) often found in cartons. Plus, you get to control exactly what goes into your milk — whether you like it lightly sweetened, extra creamy, or infused with a hint of vanilla or cinnamon.
One of the best things about homemade nut milk is its versatility. While this recipe uses almonds, you can easily switch them out for cashews, hazelnuts, or even macadamias. The process is the same, giving you endless options for fresh, clean, dairy-free milk that fits your taste.
The base recipe I love is simple and balanced: 1 cup almonds, 4 cups water, 1 date for natural sweetness, and a pinch of salt. The result is smooth, lightly sweetened almond milk that pairs perfectly with coffee, smoothies, or poured over your favorite granola.
Classic Almond Milk (Overnight Soak Version)
Ingredients
- 1 cup raw almonds
- 4 cups filtered water (plus more for soaking)
- 1 date (optional, for sweetness)
- Pinch of sea salt
Instructions
- Place almonds in a bowl, cover with water, and soak overnight (8–12 hours). Drain and rinse.
- Add soaked almonds, 4 cups fresh filtered water, the date, and salt to a blender.
- Blend on high for 1–2 minutes until creamy.
- Strain through a nut milk bag or fine mesh strainer into a large bowl.
- Transfer to a glass bottle or jar. Store in the fridge for up to 4 days. Shake before using.
Quick Almond Milk (Almond Butter Shortcut)
Ingredients
- 2 tablespoons almond butter (unsweetened)
- 4 cups filtered water
- 1 date (optional)
- Pinch of sea salt
Instructions
- Add almond butter, water, date, and salt to a blender.
- Blend for 30–60 seconds until smooth.
- No straining needed — pour straight into a glass bottle and refrigerate.
Tips & Variations
- Add a splash of vanilla extract for extra flavor.
- Swap almonds for cashews to skip straining (they blend extra smooth).
- For chocolate almond milk, add 1 tablespoon raw cacao powder.
